In the restaurant of our hotel in Pesaro, we begin with the territory to exalt its gems: simple products, combined in finely studied pairings. A surprising fusion between past and present, tradition and innovation, a cuisine that is creative and refined, inspired by the simplicity of our land.

Our chefs are given the delicate task of choosing the ideal products to satisfy the most refined palates of the guests of our '59 Restaurant: a constant quest for absolute quality, combined with the desire to find and offer "niche" products. The mastery in the selection of raw ingredients as well as 0 km sourcing make this restaurant a true gastronomic pearl of the Marche region.

For a second, the contrast between the freshness of the thyme and the warmth of the scampi brings a thrill to be savoured until dessert, when the alternation of velvety creams and delicious fruit becomes an endless delight.
